My vegan pumpkin mousse πŸŽƒ

Summer is almost over: It’s getting a little cooler, days are a bit shorter, but I welcome the new season with this autumnal recipe! πŸ˜ƒ

This one is a very quick to whip up recipe with very few ingredients necessary and you can top it with whatever crunchy toppings you have in your house. I love a spiced pumpkin latte during this season so my occasional treat would be to get one from Starbucks once in a while! The only problem I find with it is the level of sweetness which is a bit sickening and I always end up not drinking the whole cup πŸ₯€…

With this mousse though, I can control the level of sweetness and it feels like eating an autumnal cloud β›…πŸ™‚ It also happens to be vegan for my vegan friends out there!

I made a batch for the whole week where I topped each portion with some of my crunchy granola to have a mixture of smooth and crunchy at the same time, winner combination!πŸ₯°

My vegan pumpkin mousse πŸŽƒ

Servings: 10 portions

Time required: 15 minutes

Equipment required: Electric whisk

Ingredients

  • 1 can of pumpkin puree or 425 g (I use the brand Baking buddy)
  • 1 container of vegan double cream or 270mL (Elmea plant based or any other double cream you have!)
  • 1/3 cup of Maple syrup 🍁+ extra for drizzling
  • 1 tsp of ground sweet cinnamon
  • 1/2 tsp of ground nutmeg
  • 1/4 tsp of ground ginger
  • granola as toppings

Instructions

  1. With an electric whisk, whip up the cream with 2 tbsp of maple syrup until it forms stiff peaks
  2. In another bowl, mix the can of pumpkin puree, all the spices and the leftover maple syrup (taste the mixture so you can adjust it to your liking!)
  3. With a spatula, gently mix 3/4 of the whipped cream with the flavoured pumpkin puree until just combined
  4. With a spoon, fill in your yogurt pots with 3/4 of pumpkin mousse and a dollop of the whipped cream on top
  5. Add a tbsp of crunchy granola then a drizzle of maple syrup

Voila!

You can also present it layered in a tall glass alternating the pumpkin mousse/whipped cream/granola x2 for an elegant dessert. Whichever way you decide to present it, it will taste amazing!😊 Enjoy!πŸŽƒ
