When you don’t have much time in the morning for breakfast like I did lately, overnight oats are the answer for a super quick deliciously filling meal!





It’s been quite a while since I posted anything on here, but I’m back on this sunny day!π I just needed to find some time to sit and actually document my culinary experiments which happens to be quite tricky nowadays with work and life in general.
One of my new time saving trick in the morning is to have a jar of ready made overnight oats which is a little more interesting than a bowl of cereals! I found those handy Kilner containers specifically made for this purpose from the UK shop the Range for Β£6.99 each (although you can use any lidded jars that you might have at home). I liked them as it’s the perfect quantity for one person, and it had the added features of graduation in ounces and volume on the side, a lid that can be used for one portion of oat and an integrated spoon which can click on the rubber ring for an easy breakfast on the go anywhere!
Below are a couple of variations of recipes I tried and they were both delicious and kept me full until lunch time!
Here we go with the recipes:








My speedy overnight oats (GF, Vegan)
Serving: 1 portion
Time required: 5 minutes to 15 minutes (plus overnight time in the fridge)
Equipment required: Jar with a lid
Base Ingredients
- 1 tbsp of chia seeds
- 1/3 cup of GF oats
- 1/2 cup of oat milk
- 1 tbsp maple syrup
Instructions
1/ Mix all the ingredients thoroughly in the jar then close with the lid and leave overnight in the fridge
2/ Enjoy with toppings of choice!
Chocolate and Blueberries π«π΅
- Base ingredients
- 1 tbsp of unsweetened cocoa powder
- 1 tsp of vanilla paste
- Pumpkin seeds
- Blueberries
- 1 tbsp of yogurt of your choice (coconut for Vegan version)
Instructions
1/ Add the cocoa powder and vanilla paste to the base ingredients before refrigerating overnight
2/ Top up with pumpkin seeds, a handful of blueberries and a dollop of yogurt on top
Strawberries and Vanilla π
- Base ingredients
- 1 tsp of vanilla paste
- Strawberries
- Mint leaves
- 2 tbsp Maple syrup
- 1 tbsp of granola
- 1 tsp of matcha powder (optional)
Instructions
1/ Cut the strawberries in quarters and chop finely the mint leaves
2/ Add them to a saucepan with the maple syrup then bring it to a simmer for 5 minutes or until the fruits get soft and the sauce slightly thicker
3/ Reserve the strawberries for the next day
4/ Prepare the base ingredients in the jar then add the vanilla paste and the matcha powder if you want something more exotic!
5/ Next day serve with the strawberry compote and granola as toppings
SBJ (Seed Butter and Jam)π»π
- Base ingredients
- 1 tbsp of Sunflower Seed butter
- 1 tbsp of jam (I love strawberries!)
- 1 tbsp of sunflower seeds
Instructions
1/ Mix the seed butter to the base ingredients before refrigerating
2/ Top with the jam and the sunflower seeds
There are many other combination possible but those ones are my go to at the minute!
